Brinjal Coconut Curry (Vegan)
Brinjal curry was not something I had planned to have on my menu – that was until a customer requested I make one. Since then, this dish has stayed on the SADYA menu.
Slow cooked brinjal pieces fried in coconut oil, cooked in ginger garlic paste, spices, red dried chillies, curry leaves with a freshly grinded coconut paste. This dish is complete by tempering mustard seeds, red dried chillies, curry leaves.
Best paired with Kerala porottas or rice | Eat with hands for a more authentic experience.
